Short Loin Portioning

A top down image of a sliced short loin is captured with a 2D camera. The model is trained to find the tenderloin section. The height of the tenderloin determines whether the meat is a porterhouse or T-bone steak.

Correct classification improves profitability due to higher price point of porterhouse steaks compared to T-bone.

Loinpull Grading

A front facing image of the loin is captured with a 2D camera. An AI model recognizes the fatcap and shoulder bone. Distance between these regions determines the grade. The shape of the shoulder bone is used to optimize the cutting blade upstream.

Correct grading and more meat per cut improves profitability due to higher price for better grade and bigger meat portions.

Rib Cutting

A 3D point cloud is generated by a Gocator. The point cloud is converted into a height map. An AI model is used to recognize the backbone of the animal and determine the optimal cut lines. The system communicates the cut line co-ordinates to the PLC which controls the slicing machine.

Optimizing the cut lines improves profitability due to higher market price for bigger meat portions.

Loin Sorting

A 3D point cloud is generated by a Gocator sensor. The point cloud is converted into a height map. An AI model classifies each loin according to orientation. The system communicates loin orientation to a PLC which flips each loin as needed for the next operation.

Automating this task reduces risk of disruption related to a global pandemic and labor shortage.

Sausage Quality Inspection

A top down image of sausages on a conveyor is captured with a 2D camera. An AI model detects good sausages and those with defects. The system communicates co-ordinates of defective sausages to a PLC and triggers a mechanical system to remove these from the line and send them back for re-packing.

Identifying defective sausages early prevents waste downstream and provides opportunity to re-work defective sausages.
